Light and delicious, this delicately prepared dessert is topped with fresh rosemary or mint and served in a clear glass with a crunchy granola medley. Strawberry parfait is a popular dessert of the Southwest and easy to make at home.
1 tsp honey
3/4 cup strawberries – sliced
1/2 tsp of minced fresh rosemary or mint
8 oz vanilla yogurt
Granola for garnishing
Toss the sliced strawberries in a bowl and add honey, rosemary or mint to it. Take a clear glass and pour a layer of yogurt, followed by honey and berry mixture. Finish with another layer of yogurt, honey and berries. Garnish the top layer with a spig of mint or rosemary. Add granola on the top.
This dessert can also be prepared with a layer of cake instead of honey. Make sure that the cake fit snugly inside the parfait glass. Repeat the layers as desired or depending on the quantity of the glass. The strawberry parfaits can be stored by simply covering the glass with a plastic wrap and placing in the refrigerator until it is ready to serve.
